Crepe Cloud Cake

I know it’s not much to look at, between my less than stellar photography skills and the substandard lighting situation (it was getting kind of late by the time I photographed).  But trust me, this was amazing.  What is Chocolate Crepe Cloud Cake?  Chocolate crepes, obviously.  A huge stack of them, filled and covered with the most delightful fluffy and rich frosting ever.  Here’s how you make it.

The technique:

First, assemble your crepe ingredients (milk, flour, cocoa powder, powdered sugar, eggs, melted butter, vanilla and salt).  Like so:

If you can, get a cute assistant to help you mix everything together.  If not, you’ll have to mix it yourself.

Mix the dry ingredients first.

Then the wet.

Then pour the wet ingredients into the dry.

Then use a whisk to mix into a thin batter, somewhat thinner than a pancake batter.  You might need to add a little more milk to thin it out.

Pour 1/4 cup of batter into a nonstick pan, tilting and rolling the pan so that the batter spreads out.  Cook over a medium heat, flipping the crepes once.

After you make a stack of crepes (we ended up making about 12), place them in the freezer to cool them down.  Then make the frosting.

Mix one jar of marshmallow fluff into one package of Neufchatel or cream cheese.  Mix well.  Then fold in an entire container of cool whip, one third at a time.

Next, spread layer upon layer of the fluffy cloud mixture on each new layer of chocolate crepe.

It will start to stack up, like this:

Use the rest of the frosting to coat the outside of the Cocolate Crepe Cloud Cake.  This is something best reserved for a party of people.  It doesn’t really keep well in the fridge, because the crepes get stiff.  So eat it soon after it’s made.

The ingredients:

  • 2 cups milk
  • 1-1/2 cups flour
  • 1/4 cup cocoa powder
  • 4 tablespoons powdered sugar
  • 2 eggs
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 package cream cheese or Neufchatel cheese
  • 1 jar marshmallow cream fluff
  • 1 tub of Cool-Whip

Ingredients

  1. Mix the wet ingredients.

  4. Cook the crepes in a nonstick pan, using ¼ cup of batter at a time.
  5. Cool the crepes.
  6. Mix cream cheese into marshmallow fluff.
  7. Fold Cool-Whip into marshmallow fluff/cream cheese mixture.
  8. Spread layers of frosting on crepes, then stack them.
  9. Finally spread a layer of frosting on the outside of the Chocolate Crepe Cloud Cake.

  1. White balance is a bit off, but otherwise the photos are better than you are giving yourself credit for.
