Garden Fresh DIY Hot Sauce Recipe

I love hot sauce.  I’m not crazy, a glutton for punishment, I mean.  But I do like a little heat for some dishes now and again.  It’s awesome on burritos.  Or jambalaya.  Or nachos.  And fortunately, this time of year, our garden produces some amazing hot peppers, and it’s a shame to waste them, so I like to make my own DIY hot sauce recipe.  Here’s how.

The technique:

First take three hot peppers from your garden and roast them.  I did mine in my toaster oven by cooking them on the ‘dark’ setting three time, flipping them each time.  I imagine throwing them on the grill would be even better.

Next, grate ginger and nutmeg into a large measuring cup, and add fresh ground pepper.  Cut off the stem of the red peppers and then take out the seeds.  Add salt.

Next, add vinegar.  You want to use enough vinegar to fill up whatever bottle you’re using.  I ended up using a little over a cup and a half.

Then process with an immersion blender.  Strain through a sieve, discarding the pulp. Pour the liquid into the bottle you’re using, and add 2 or 3 whole allspice cloves.  It’s fine to use right away, but it won’t really develop its full flavor until it’s all been setting for about a week.

Be sure and wash your hands afterwards, just in case.  There’s nothing worse than getting hot pepper residue in your eye or other places.

The ingredients:

  • 3 large red hot peppers
  • 1/8 tsp fresh grated nutmeg
  • 1 tablespoon grated ginger
  • 1/8 tsp ground pepper
  • 2 teaspoons salt
  • 1 and 1/2 cups vinegar
  • 2 or 3 whole allspice

So if you’ve had an overabundance of hot peppers in your garden, this is one thing you could do with them.  Of course, you could always do something crazy like make Thai red curry paste or something.  That’s good too.

Ingredients
  • 3 large red hot peppers
  • ⅛ tsp fresh grated nutmeg
  • 1 tablespoon grated ginger
  • ⅛ tsp ground pepper
  • 2 teaspoons salt
  • 1 and ½ cups vinegar
  • 2 or 3 whole allspice
Instructions
  1. Roast three hot red peppers.
  2. Cut off stems and deseed.
  3. Grate nutmeg and ginger and grind pepper.
  4. Add pepper, nutmeg, ginger and salt to a measuring cup.
  5. Add hot peppers.
  6. Add vinegar.
  7. Blend with immersion blender.
  8. Strain through a sieve, discarding pulp.
  9. Place liquid in the bottle, adding whole allspice cloves.
