Rosemary Pork Crockpot White Bean Soup

With the prospect of another Polar Vortex on the way, warm and easy to make soups you can make in a crockpot are always welcome.  There’s nothing better on a cold day than coming home from work to a fire roaring in the fireplace and a delicious and warm soup in the crockpot.  My recipe for easy Crockpot White Bean Soup features the robust flavors of rosemary and a pork roast.  The herbaceous notes of the rosemary (and bay leaf, oregano and thyme) complement the umami flavor of the pan-seared pork roast. (This recipe is something I came up with several years ago, inspired by a visit to Monte Ne Inn Chicken.  If you haven’t been, you really should go.  It’s worth the drive.)

The technique:

This easy recipe, like any other, requires preparation.  You’ll need a boneless pork roast (we like to use Tyson), 3 cans of great northern beans, 2 cans of chicken broth, half an onion, fresh rosemary, garlic and bay leaf.


Season the pork roast.  I like to use fresh cracked pepper and Penzey’s Forward Seasoning.


Next, I seared the pork and onions in a pan with olive oil.


Then I placed the seared pork loin, onions, rosemary, bay leaf and garlic in the crockpot.


Then I added the great northern beans (rinsed, of course).


Finally, I added the chicken broth, oregano, thyme, salt, pepper and more Forward Seasoning.  The soup cooked for 7 hours on the lowest setting.  In the end it was flavorful, the pork almost falling apart.


The ingredients:

  • 1 pork roast
  • 3 cans great northern beans
  • 2 cans chicken broth
  • 1/2 white or yellow onion
  • 2 cloves garlic
  • several bay leaves
  • sprig of fresh rosemary
  • 1/8 tsp oregano
  • 1/8 tsp thyme
  • 3 tsp Forward seasoning (2 to season the roast, 1 for the soup)
  • fresh cracked pepper (to taste)
  • 1/8 tsp salt
  • 1 tablespoon olive oil
